Serenity Batch #6

A sparkling mixed culture ale made with NSW grown regenerative organic barley and hopped with Pride of Ringwood hops from VIC.  

Inspired by one of our all time staff favourite beers, a certain Adelaide based sparkling ale, this is an arranged marriage of this certain wort with our house culture that has made for a match we love. Serenity is a sparkling mixed culture ale made with NSW grown regenerative organic barley, hopped with Pride of Ringwood hops from VIC and refermented and bottle conditioned with organic sugar. 

This Batch #6 is different than the others as it has been aged in barrel for over one year before bottling. We had tucked away a single puncheon of the fifth batch of Serenity (brewed in September 2023) to see how it developed. Earlier this year, we tasted it and it had collected a real lambic-vibe to it... I'm not sure how to exactly put words to it... but I think the significant Pride of Ringwood element translated into some gueuze-like funk. We bottled this in May 2025 and it went ropey unexpectedly which was kind of cool too. Its through that now and ready to enjoy!
