Pair 2026 is an ale blended with Grenache Blanc and Savagnin grapes from Jauma Farm. The ale was brewed with organic red wheat and organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. It was then further macerated with organic Grenache Blanc and Savagnin pomace from the first harvest and winemaking from Jauma Farm in the Adelaide Hills, SA.
It was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.

On a trip to Adelaide during harvest last year, James and Sophie mentioned that their first crop from their home vineyard was set to be picked and vinified during my stay with them, in what is now their cellar door. This ale is an attempt to capture a bit of that special occasion, a harvest from their own home block, into a beer. A minuscule harvest was pressed for wine and these special variety skins were whisked to Sydney and macerated wth aged Gold.
The palate is reminiscent of the first two Distinctly Perceived bottlings, dry mesquite-seed-pod tannin with fruit overtones on the palate. Really enjoyable.
