Noel is a festive Australian Wild Ale aged in ex-Muscat barrels from Clonakilla Winery in Murrumbateman, NSW.

Noel is an amber barrel aged ale wholly fermented by a diversity of yeasts and bacteria collected from native flowers in NSW aged in ex-Muscat barrels. Once this festive ale finished primary fermentation, it was rested in single French oak cask gifted from Clonakilla Winery in Murrumbaetman NSW for 16 months. This cask, first filled in 2005,
worked in their Muscat-wine solera system for 19 years before its retirement to us. Following this maturation which imbues these delicious flavours into our beer, it was bottled and allowed to naturally carbonate and mature before release.
