Hors Catégorie 2025 is a blend of organic ale, organic grape skins, organic apple cider and organic whisky.
The ale was brewed with organic red wheat and organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW and macerated with freshly pressed Semillon grape skins grown by our friend Anton von Klopper of Lucy M in the Adelaide Hills of South Australia in 2025.
This ale and marc were allowed to macerate before being blended with organic apple cider from the 2023 harvest and a small addition of whisky. It was then bottled with unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.

If any of y'all have ever met Aton, you'll know that he, and his drinks, dont squarely fit into any box someone might attempt to ascribe him by. That was certainly a launching pad for this beer, drink... thing?
While this is most certainly a beer, we decided to bend the rules a bit and not get too caught up... instead blend in a variety of things to send the drink down this grape-y calvados direction.
The result is pretty excellent. I love drinking this beer... it's one that has so many nooks and it continues to draw you back for more just to dissect what is going on.
Oh Im also not the biggest cycling fan (as in I don't stay up and watch every stage of the tour each year) but I do love road cycling so the name is a nod to something being too hard to classify.
