Gather ye Rosebuds 2024 was made in collaboration with authors and bakers Michael and Pippa James in celebration of their newest book Sweet Seasons.
The ale was brewed with Organic red wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. Oak aged ale was macerated with Organic quince and Organic crab apples from Block 11 Farm as well as Organically grown quince from Ravensworth.
It was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.

Oh how much fun is this beer, so much tannin and structure across the palate, the slightest hint of rose-colouring. Utterly in-love.
Michael and Pippa are dear friends of mine and over the course of Grainz 2023 we corroborated on this idea of a beer for their book. The cookbook was focused on sweets, which are tough for a brewer such as myself because any sugar ferments straight out so we had to stray away from that idea. Over a few subsequent zoom calls and Brayden and I riffing back and forth, we decided to hone in on Michael's British heritage and use quinces in this beer, which also do feature in the book thankfully! I have always loved the quince saison beer from The Kernel in London and with Brayden's two years in the UK, we thought it might be interesting to look into this.
Sourcing quince, though, turned out to be far more challenging than I thought until I did the logical thing and just asked Greg from Block 11 (same source as the apricots for Henry '24) who happened to have a good crop of organic quinces... and while on a long winded phone call with him he also sold me on these pink fleshed crabapples which just went hand-in-hand with the overall vibe of this beer.
The label really cam about while Colin (Goldstreet) was doing Colin things and took some of the apples to mandolin and dried the little discs to use with cheese on our menu. They were so striking, I couldn't hold back from arranging them on a bit of butchers paper and snapping away.
