Clos de Billy 2025 is a blend of organic ale, organic grape skins, bergamot zest and
cardamom pod.
The ale was brewed with organic red wheat and organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW and refermented with freshly pressed Cabernet Sauvignon grape skins from our friend Sholto Broderick of Basket Range Wines in the Adelaide Hills of South Australia in 2025.
Just before bottling it was macerated with bergamot zest and crushed cardamom pods
then bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.
Made exclusively for Billies Beer Fest 2025 and The Collective.
The cabernet skins for this beer were a destined for rose, so that is where this beer got its start. For the Billies beer fest (coming up in Nov) I was keen to send something in line with what we do, but also, given its a festival, something that had a strong presence, even with just a little sip. The bergamot and cardamom pods do the heavy lifting on the finished beer here with a background of cabernet richness and tannin. Its sort of like a supercharged rosé at this stage. Very punchy and alluring.
Similar to the Golden Hour beer, I'll be keen to let this sit and would recommend another 3+ months ageing on this before you crack in.
