Ashes to Ashes 2023

A study in the nuance and layering of smoke flavours in beer.    

With a smoked malt character and one of our highest ABV beers ever released, Ashes to Ashes 2023 is perfectly timed for the cooler weather this time of year. 

This first blend is comprised of four barrels of a strong, amber based beer which underwent an extended boil. The beer was fermented and then aged in barrels for 18 months which previously held Foggy Morning, our retired beer made with 100% smoked malts. Before bottling, the beer was macerated with freshly malted and toasted Hall's Creek Wattle seed. By layering the smoke from three different sources rather than getting all the flavour just from smoked malt, the resulting beer is pretty lovely. 

Meesh's tasting notes - Bursts out of the glass with rich campfire smoke, but on the second look a sweet chocolatey note emerges which is almost reminiscent of a cherry ripe. Layered and complex. Roasty wattle seed on the back palate is matched with singing acidity to create a balanced beverage.
