Field 2026 is an aged biere-de-garde aged with Christmas mince. The base ale was brewed with organic barley and rye with an extended boil before being wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW.

It was aged for 1.5 years in a single ex-wine French oak puncheon before being macerated and refermented with AP Bakery’s 2025 Christmas mincemeat pie filling of dried and candied fruits with Wildflower whiskey.

It was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release. Made exclusively for The Collective. Label artwork by Benny.
