The ale was brewed, as schiste sans schiste, in February 2023 with Organic Red Beaufort wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW.\u003cbr\u003e\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv\u003e\u003cspan\u003eThe wort was boiled with leftover oyster shells from Poly Resturant, Surry Hills. Following primary fermentation it matured in oak for two years and seven months.
