This ale is a callback to our 2019 St Phoebe and was brewed with organic red wheat and organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW.\u003cbr\u003e\u003cbr\u003eIt was aged for 12 months in ex-wine French oak barrels before macerating and refermenting with NSW- grown raspberries for 2 months.\u003cbr\u003e\u003cbr\u003eIt was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release.\u003cbr\u003e\u003cbr\u003eMade exclusively for The Collective.
